Birthday Cake and Chicken Curry

It's my cousin Britton's Birthday today so yesterday in celebration me and my roommates made her our favorite dinner. What is our favorite meal of the year you might ask? 
Chicken Curry
We can't get enough of this stuff.


  Rice Pilaf:
2 cups long grain rice
2 Tbsp butter
1/2 cup minced onion
2-3 cloves minced garlic
3-5 cups chicken broth
1/4 tsp cinnamon cloves
1/2 tsp Cardamom
2 Tbsp Lemon 

Preheat oven to 350 degrees
 Rinse the rice until the water is clear.
Melt butter in a large cooking pot.
Add onions and cook until translucent. Add garlic.
Increase heat to medium and add rice. Stir so it is coated with butter.
Add broth spices and lemon juice, bring to a boil.
Cover and bake for 20-25 min (until rice is soft)

This rice recipe is one of my favorite parts of this dish and it can go with just a about anything. I highly recommend trying it!

Indian Style Chicken Curry:
Chicken Breast - 1 large breast should be enough
1/2 cup minced onion
3 cloves fresh garlic crushed and minced
2 Tbsp curry powder
1-2  cups tomatoes (more is always better)
2 cups half n half or whole milk
2-3 Tbsp fresh lemon juice

 Cut up chicken, cook it until it's no longer pink.
In separate pan saute onion until translucent. Add garlic.
Add chicken and salt to pan and stir well increase heat and cook 15-20 min.
Add tomato and cook for another 15-20 min.
Mix curry powder with a little milk to form a paste.
Pour the paste on the chicken mixture and stir.
Add Half n Half to the pan. Stir and cook until it thickens.
(Be watchful of the curry because if it cooks to long it starts to separate and clump)

 The great thing about this recipe is that it's pretty versatile. 
We had a lot of potatoes around the apartment that we needed to use so we added some to our curry and it was delicious. 
You can add whatever you like best to it!


The best part of a Birthday is the dessert!
 My roommate Phoebe has this super power where she can make something absolutely delicious without a recipe. She was given the task of making a Birthday cake and this was her finished product, no recipe involved...
